It is summer time and we are lucky. The “Cité de Carcassonne” is standing proud on the hill, we are at the height of the season and it looks like a joyous ant-hill in which ants would be cicadas… fed with ice creams, candies, mussels and fries or… with a bit of chance with at their table, a good glass of wine and a rich plate filled in with pata negra.
It is in the small hidden streets of the cité than you will find plan B. Olivier Zavattin, small sommelier with a big heart just took over the Comptoir des vins et terroirs facing the hôtel du Donjon. If he isn’t big, it’s just by its size, Olivier showed what he can do in many Michelin stars restaurant in the region before joining Gerard Bertrand at l’Hospitalet. And it was time for him to drop the subject.
Today, far away from the fuss, he welcomes you with a malicious smile on his terrace shaded by olive trees. He is there for the sake of sharing the love, it’s written on the signboard. You are in the peaceful corner of the cité, pedestrians are rare to give you space for more loving air. I was perfectly settled, so well that I stayed all day to meet the newcomers… that came to taste a Beaujolais . At the jazzy guitar sound, I took the time to taste some deliciousness, you should never leave the Languedoc and even less the Comptoir des Vins without a case of wine in your suitcase!
